Hearty Vegan Mac 'n' Cheese Ingredients 1 tub thickened cream (we use @locodairyfree)250g macaroniOlive oil1 finely chopped broccoli2 tbsp dijon mustard1 diced brown onion4 cloves minced garlic2/3 cup panko breadcrumbs2/3 cup favourite vegan cheeseSalt and pepper to taste Method Boil macaroni and broccoli pieces together, drain and set aside Heat oil over medium heat in a pan Stir in onion until translucent Add garlic and dijon mustard, stir on a low heat for 1 minute/till aromatic Add macaroni and broccoli Stir in one tub of thickened cream Salt and pepper to taste Transfer to baking dish Top with breadcrumbs and vegan cheese Bake for 25-30 mins at 180°C or until golden brown
